Vegetarian Rice Rissoles
I've been trying some new recipes lately to try and keep my non vegetarian family happy with vegetarian food.
This recipe came from a dollars savings group I am a member of and it sounded so weird I just had to try it.
Its really easy and very yummy - but it could do with just a little something extra in it - so if you find that extra thing, let me knowFantastic Rice Rissoles
Ingredients:
3 cups cooked rice
2 beaten eggs
1 tsp mixed herbs
1 tbsp Marmite (I used vegemite)
3 tbsp peanut butter
Oil for frying
Method:
While the rice is hot mix all the ingredients together. Hot rice is easier to mix as it helps the Marmite and peanut butter to melt through. Shape into rissoles. Fry in shallow oil, turning often to brown evenly. Delicious hot or cold.

Wow babe it sure does sound weird ... I will also have to try it ... will let you know how they turn out and what we think of them, can't wait to try them. Thanks for posting the recipe, and if you find any more good recipes be sure to post them also, as I am always looking for quick and easy vegetarian meals to make.

Ok I have now also made them and think they are just as awesome as you say ... "they taste just like real rissoles mum", charmaine commented after bagging me out for even attempting to try such an unsavoury recipe, lol.
Which gave me an idea as to what the missing ingrediant is ... just an idea mind you ... i havent tried it but I think I will ... "oinions", they are in a normal meat rissole ... so why not in this rissole. What do you think?
